MARV’S POACHED EGG WITH MUSHROOM

Hi there, it’s another day to celebrate again!!! I’m just so thankful today for our Heavenly Father for the free air we breathe.

 So…..for our breakfast today, let’s do it fast. It’s always a great way to add extra veggies to every meal we make or eat. I have prepared poached egg and mushroom for today’s recipe. Egg and mushroom is a good combination for a healthy breakfast. Eggs are rich source of inexpensive high quality protein while mushrooms are also packed with nutritional value. They are low in calories which are great sources of fiber and protein.  Also, mushrooms provides vitamin B and D.

 Please follow the simple instructions below for your upgraded poached egg.

Ingredients

  • 6 tbsp. low sodium chicken broth or vegetable broth
  • 1/2 cup crimini mushrooms, sliced
  • 1 bunch spinach
  • 1 tbsp. Mediterranean dressing
  • 3 eggs, poached

 Directions

  1. Heat broth in a 10-12 inch stainless steel skillet. Healthy Sauté mushrooms for 4 minutes over medium heat stirring frequently.
  2. Add the spinach and stir for 1 minute.
  3. Toss with Mediterranean Dressing and top with two poached eggs.
